Why it works:
Contrary to popular belief, putting a bit of salt into a pot of water doesn't exactly help water boil faster... but it does help it boil hotter. Salted water requires a higher temperature than unsalted water in order to boil, but the temperature also gets hotter quicker (source). This is because salt increases water's specific heat capacity, its ability to absorb heat energy from the stove quickly. This hack suggests a water solution with 25% salt (7 times saltier than seawater!), which boils quicker and hotter than unsalted water (source).
Why it matters:
When it comes to cooking dinner in the 1920s, women had a lot on their plates. Minimizing the time and effort that these chefs put into making dinner gave them more time to care for the home and their children or to just relax.
